Well, my volts are consistent across the four panels at ~36 volts each. So, with them at 2P2S I get 72 volts.

Hmmm, Could my amps change because the MPP shuts it off? In other words, there is no load, so the panels go nowhere. I do have volts, just the amps change, hence the watt input is changing. Is that right? This is my off grid system, there is only the small load powering the AIO Growatt 3000...
