Your load panel most likely has n/g bonded, the question then becomes is your setup bonded to its own ground or back to the main panel? After that it gets out of my comfort zone but a lot goes into the ground, neutral, electrode, subpanel, etc discussion.

Get some hinges and small winches so you can leave the panels hanging down the side of the truck and then hit a button to move them up. If you mount some pulleys on metal conduit above the roof line you could adjust both sides to optimize tilt angle as well! Just don't hit the deploy button...

I personally prefer the batwing deployment, but some will default to the phoenix. Either way unless you are in Arizona or Gotham, or have access to cheap labor, some tidal fish bobs have more efficiency... again, personal choice.

That is a personal question and outside the scope of this post. I will refer you back to stacking panels for deployment during the rest cycle.

It will be a lot of work. First you will have to stack the panels high enough to fit the number you would need, secure them, but also make it so you can quickly deploy them in an empty parking lot each day. I would recommend building some variable angle 2x4s so you can minimize your down time...
