5k Growatt min Connect 2 strings to 1 mppt

Hi everyone,
I would really appreciate some advice.
My Growatt 3kw inverter died out of warranty. I have had it replaced with a 5000TL-X Growatt min.
I have 2 strings of 7 panels each. 250w panels.(3.5kw Total) I would like to connect these strings together to go into one MPPT.
This would leave a MPPT free to add another string to the system.
My understanding is they would be connected in series which would raise the voltage but not the amps.
Can I use a mc4 combiner cable? Would I have to do any rewiring on the roof?
Then I add more panels (12x250w) and connect them to the now unused 2nd MPPT
Does it matter if I Have 1 string of 12x250w panels on one MPPT and 14x250w panels connected to the other MPPT?

Docs I found says it supports up to about 7kw of PV. and up to 550v DC (360v nominal) so assuming your panels are ~30v each then 14x30 = 420v which would work if you put them all in series.
Yes the dual MPPT input should support 2 different size PV strings.
