Hi, I have 2 seperate off grid systems, one is a 48v victron easy solar and the other is a 48v growatt spf 3500 es. Both are connected to seperate battery banks. Im pretty sure both have neutral ground bonding inside the units. My question is, will it be ok to run the ac output into the ac input of one or the other so one can act as my main rig while the other is sort of a "shore power" back up? Are there any risks from this?

not as long as you have your grounding correct. I have plans to use a spare 12 volt inverter to power essentials in the same fashion. run one leg form my 48 volt inverter through my spare 12 volt. if the 48 volt unit goes out the 12 volt will use its internal transfer switch to turn on and continue to power the fridge, freezer and the sewage bubbler pump

Yup, as stated above.
As long as the second system releases it's bond, while being fed by the first system. Everything will be fine.
I have 4 systems connected together this way.
 
Just did this...fed my new 6848 into my pair of victron multiplus 2
