So I have a Growatt SPF12000 which has a voltage max of 250 and a 7000 watt PV input. I have lots of panels which have a 37.2V open circuit voltage and 240 W. So I can only hook up 29 panels as 7000/240=29.2 . However Im unsure if you can have uneven strings like having 4 strings of 6 panels and one of 5 ? if not I guess I need to go with 7 strings of 4?

Find out if the controller can USE 7000W of input, or if the maximum connected solar is 7000W

You are running close to max on the input voltage have you accounted for temperature ranges in your area
running in colder temperatures voltages can increase above your max voltage

Hmmm. What model do you have? All the growatts I see are limited to 150V
