From the FAQ on the AC100:

"Please note that the AC output ports can only charge/power devices that operate at less than 600-Watts, besides, the whole wattage should be under 100watts as well . Once exceeding, Bluetti AC100 will shut off automatically."

Are they saying the inverter can only output 100w or it will shutoff?

I believe this is just a typo, they meant to say that the total input must be less than 100W.

I believe it's a typo as well, but I am going with they meant to say "the whole wattage should be under 1000 watts", not 100 watts. Meaning that you cannot exceed 1000W of output by simultaneously using the full set of both the AC and DC output ports.

The inverter is capable of 720W surge.

There are several DC outputs as well:
  • 1 USB-C port (45W)
  • 4 * 5V 3A USB-A ports (60W)
  • 1 12V 10A cigarette lighter port (120W)
  • 1 LED lighting/SOS port (whatever that means, no other info so unknown watts)
Adding all that up, you're at 945W+ (depending on that LED lighting port).

My take is that the unit will turn off if it hits 1000W of output.

Does it really shut off if the input power is exceeded?
Based on my interpretation of the typo: no. That's not going to happen.

(Edit) P.S. You could try contacting them and ask.
