I am starting with 2-100watt panels and realize I will need more.

I will be hooked to shore power 95-99% of the time.

Any advice or suggestions for improvements or additions. Most of the items have already been purchased except for 12v panel, lights, fridge.

That aircon and fridge firing up at the same time might make the inverter angry but it should hold. You're going to need to do a rough power audit to figure out how many watt hours you're going to need for a day or so and make sure that's enough battery to hold the load.

Definitely more panels though, 600-800 if you can physically swing it. For a simple system it looks pretty complete. As a side note, my brother has those exact same lights in his pop-up and I'd recommend making it easy to replace as the switches get flakey about the second time you hit a pothole.
 
What is your goal for this system? Grid bill reduction or emergency power or ??

Is this a mobile or stationary setup?
Cargo trailer camper. We mostly go to state parks and campgrounds with power hookups but would like to be able to have a little power if I get caught spending the night in a Walmart parking lot on the way to campground.
