Circuit breakers

I have a 245w 24v solar panel 60amp mttp solar charge controller
Battery bank of 30ah sealed lead acid will upgrade soon but that's it for now inverter 500w1000w peak. What circuit breakers would I need between each stage?

A single solar panel does not need a fuse/breaker; however, you are free to use one. The panel label should indicate a max fuse rating. Use that.

If you use suitable wires and plan to use 60A, fuses/breakers should be sized for 1.25X max current, so 75-80A depending on what's available.

Cheap fuses and breakers are not recommended. Many cheap products on Amazon fail to meet rated performance.

The wire from the panel to the controller is 2.5mm
The wire connecting the battries to panel is 6mm

I assume you mean mm^2, not wire dia.

2.5 is between 13 and 14 gauge and good for 22A @ 40°C (per EN 60204-1); Max panel output is Isc = 10.54A

6.0 is between 9 and 10 gauge and good for 37A @ 40°C; Max charge current is 340W/12V = 28.3A
