Disconnecting solar panel input at controller

I live in Las Vegas. I use my RV during the cooler months. I store it during the summer. I have only one 160 Watt panel installed. I may get a 350 Watt panel to replace the smaller one. I only have room for one panel on my roof. My question is if I disconnect the input to controller so no voltage comes from panel during summer storage will it hurt anything? Will putting a breaker on just the positive from the panels be ok?

No, that won't hurt anything. A breaker on just the positive is OK. Many of us use a dual-pole breaker, but that may be a preference not a requirement. Either way, make sure the breaker is DC rated for the number of amps your panel provides.
