Do you use an ESP8266 or an ESP32 board (I can't identify it in your pictures). The ESP32 Wi-Fi is much better compared to the ESP8266. You also may consider to attach an external Wi-Fi antenna which may help a lot (see this example).
There are also ESP32 with integrated ethernet available (see this example - but I never used one of these).
I contacted the developper and he informed me that LAN currently is not supported. However he gave me some guidance what to alter in the YAML files to make this possible.

I already ordered a LAN enabled board and will try to make it work.
 
Laptop, R-Pi and a Wyse 3040 to name a few. CAN USB adapter I use: https://www.amazon.de/-/en/dp/B0BQ5G3KLR or similar.
I'm new to the can bus protocol and connections. I have two R48-3000e3's in transit. I gather the underlying transport is RS-485 and the software I use needs to support "extended super frame" or something similar? Would you have a link with a wiring diagram for the USB dongle you referenced and where to land each wire on the R48-3000es? Note, the vendor included the breakout PCB module with my order. The AliExpress vendor points to the CAN connectors where i can solder wires, no other reference provided.
