I am about to order an Ampere Time 24V 100Ah battery to replace my dead fla battery bank of the same size. Upon arrival should there anything be done before hooking it up? (It's my first LFP battery.) If yes, what? Does it need to be charged to 100% SOC before putting any load on it? How critical is it to do a capacity test to rule out a lemon?

I would fully charge it. Remember the charge settings for lifepo4 battery is different from fla battery. So make sure you have the right charger.

As to the capacity test, that is fully your decision. I am currently running my first lfp, and since is my only source of power, I never ran a full discharge cap test, but I did compare the readings between my HQ victron battery monitor, and the numbers on the BMS. SOC percentage matched the victron coulomb counter. In my case, it's a 12v100ah battery, so one percent should equal 1ah, and it does. My battery is a set of prismatic cells assembled by lynx battery.
