First solar set up for a 2008 Tundra 4x4

This is my first time working with solar. I am looking for some input and general direction. My sons have a 2008 4x4 Dbl cab Tundra. They plan on touring the backroads, overlanding throughout the US. This could be from one weekend to a couple weeks of travel with multiple days of rest. I am thinking of following the 400 Watt Solar Package w/ Alternator Charging Blueprint, but making a few changes to the plan to get this rig up and running and save a few dollars
They currently have the following appliances:
Dometic cfx3 95dz
Manxman Mini 1" roof vent
2 - LED lights
Several USB charging ports
Air compressor
Wench
And who knows what in the future.

The plan:
2-100 watt Renogy solar panels instead of four
1 - Renogy DC DC Battery Charger w/MPPT 50 amps
1 - Renogy 1000W 12V Pure Sine Wave Inverter with Power Saving Mode (New Edition)
1 - Battle Born 100 Ah 12V LiFePO4 Deep Cycle Battery or Renogy Smart Lithium Iron Phosphate
Appropriate wire, fuses, and breakers per the plan

Is there anything the I am missing?
