SO I have ordered and received everything in the attached picture. But I still need roof racking for the panels and wiring.

The panels will be installed on a Composition Shingle roof. Any recommendations for Racking?

The wiring from the PV Panels to the Inverter location is about 100ft through attic space accounting for twists and turns. I am thinking about using 10 gauge THHN in EMT conduit. Or do I need to use PV cable? Or, would you do something different?

As shown in the diagram, the goal is to power a panel of critical load device "off-grid" so if we lose grid, we should be fine for a while. In addition, those loads will not be using grid power which will offset the bills a bit. As the inverters switch from solar to battery to grid charging, will it affect the load circuit or will it be seamless?

I used Tamarack from NAWS. It was/is really easy to work with.
I didn't buy there 'kits', rather pieced together my own kit as there was stuff I didn't need in Tamarack's 'kits'.
Note Tamarack is UL listed and has a list of panels that are known to work with there racking in there literature.

Another highly recommended rail system on here is IronRidge, I went with Tamarack for the ability to order 7' rails and ships UPS (avoid crazy freight).

Edit - Both companies offer flashing for shingle roofs.

Also, look at attached wiring diagrams. You can save some wire and +/- on the same end.
I wired the 9 in the photo above using the skip / leap frog method.

For your wiring question: you should run either in conduit.
PV is needed when exposed to UV, but once you transition into the conduit you can use standard building wire, so long as the insulation is rates high enough (THHN)
