High output Generator? 7k Budget

I am currently looking at Ecoflow Delta Pro with one battery
Vs
Bluetti AC300 and one battery

With expectation to expand bank latter

This will be for a tiny home, highest need appliance would be a water pump (way down the road from now, and that may be a stand alone system anyway when that time come)

What other brands should I be looking at?

The benefit of the systems you suggest is they are easy to quickly setup and just work. The downside is apart from adding extra batteries there is little you can change. An installed system can be more customised to your needs and fault components replaced or upgraded more easily. It really depends what you are looking for and able to work with. Our BLUETTI runs the kitchen and home office fine with solar panels and we wanted it to be easily portable if needed.

I’m really considering the AC300 with 2 B300s….

The solar input parameters has me confused. How am I supposed to get near the 2400 watts the charge controller has? 150volt and 15amp max…doesn’t allow for parallel and with my current panels of 27 voc at 200 watts I can only apply 1000 watts of panels

How do I increase the solar array to get the full charge capability?
