I can't seem to find a wiring diagram for 2S4P for panels.

It would seem you just need a single set of 4-1.

It would seem you just need a single set of 4-1.
Take 2 panels, connect (+) from one to (-) of other.
Repeat a total of 4 times, so you have 4 sets of two panels in series.
Take the 4 (-) wires and connect to the 4-1 parallel connector.
Take the 4 (+) wires and connect to the 4-1 parallel connector.
You now have 8 panels wired in 2S4P.
Repeat a total of 4 times, so you have 4 sets of two panels in series.
Take the 4 (-) wires and connect to the 4-1 parallel connector.
Take the 4 (+) wires and connect to the 4-1 parallel connector.
You now have 8 panels wired in 2S4P.

Yes your diagram looks correct.
The easy way is to separate your panels into pairs. Connect + of one panel to - of the other... now they're in series. Do this for all 4 pairs.
Plug all of those into this (assuming your panels have MC4 connectors of course):
You'll need 1 pair of MC4 connectors to make a cable to your SCC (sorry, link is for 5 pairs, but great price and tool included):
Or get a premade cable to your SCC (they come in many different lengths):
