Can a single shunt, like the AiLi or the Victron, send signal to two monitor screens. I have a AiLi mounted in my camper and I want to watch battery charging while traveling in the truck.....

The Victron BMV-712 has a wired display and Bluetooth. So you can put the screen in the camper and use the VictronConnect app from your truck. It’s just a matter of whether the Bluetooth signal will reach far enough. The Bluetooth on the BMV-712 is much better than the Victron SmartShunt.

Probably. As long as both meters have a high impedance (they should) then they will not interfere with each other. I would want to avoid too long of a wire though, and certainly don't want an extra connector between the shunt and the meter. So if mounting a second meter in your truck involves that, I wouldn't do it.
Getting a Victron 712 would be a nice solution. You get a lot of useful history with it, too.
