Panel Grounding on Standing Seam Copper Roof

I'm adding 9 (390w) panels on my wife's studio which has a copper standing seam roof. I'm using S-5-B clamps with S-5-PV kit 2.0 mounts (so rail-less). The copper roof is connected to earth ground using 2 grounding rods. I think the main load center's ground is connected to the same grounding rods but I built this building 20 years ago so I might be miss-remembering. My plan was to also run a ground wire from each panel to the inverter's (EG4 6000xp) PE bus bar but wasn't sure if this is correct. The S-5-PV mounts have little teeth on the bottom plate so I'm sure there will be a good connection between the panels > roof > earth ground. I was worried this might be a problem (ground loops?).

Electrical safety grounding is not accomplished by connecting to earth, it's accomplished by connecting to the grounding system. Which is connected to the source, through the N/G bond.

This is correct. Assuming that bar is connected to the grounding system.
