These panels are going on the East and west sides of my roof. Unfortunately I can’t have them on the south side. That’s why I have two series.

what sort of dc connect do I need to get? Could someone suggest one?

also, do I have to have an ac disconnect?

Which model Sunny Boy - does it have a DC disconnect built in?

AC, could be OK to wire direct to a breaker. Depends on utility requirement.
My install years ago, they wanted a visible-blade disconnect.
Later, that became optional (but they might unplug meter and leave no power to house if they felt the need to ensure no backfeed.)

Does your state or locality require Rapid Shutdown now? That is a module per panel, to lower voltage to < 80V between any wires. For fireman safety.

I’m getting this 5kw model. I wasn’t sure what to look for in the manual. Any idea if it has the built in dc disconnect?

"DC disconnect device / DC reverse polarity protection ● / ●"
(both standard features)
I don't see a switch on the front of the unit, probably on the bottom edge.

Oh, I think that's it on the left

Note under Datasheet section they also have SunSpec Rapid Shutdown. Find out from your permit office or googling what version of NEC your state uses and seeing if that addresses it.
Much obliged!
