These are Li-Ion batteries.

I have the opportunity to get as many as I would need for my project free of charge if I want them.

I would like to build two 12V 200AH batteries. They will be used in a 1kw off grid setup to power a 12v 1500W inverter currently. At some point will be swapped over to 24V.

I have never built my own battery before.

I currently have a drop-in 12v lifepo4 which is nearly worry free.

Should I be concerned with the Li-Ion chemistry. Should I stay away from it? I have visions of tesla fire at the cottage.
 
Li-ion (NMC) is makes for crap 12V. 3 cells is too few (9 to 12.6V) and 4 cells is too many (12-16.4V). Need 7S for optimal 24V (21-29.4V).

The electrolyte is also toxic and flammable. Proper battery management is critical. Over charge them? Best case: ruined, worse case: small fire, worst case: explosion + fire.

Your visions are not unfounded, but you can manage that risk if you....
  1. become an EXPERT on this type of cell.
  2. Purchase sufficient equipment to test each and every cell you use for internal resistance and capacity and sort accordingly.
  3. Get a spot welder and fuse every cell.
  4. Get a quality BMS.
  5. etc.
