Keep in mind that the letter I is used as a general representation of "current". Current can be measured in a specific unit - amperes (A).
It is the same for power (P). That's the general term. Specific units of power can be watts (W), horsepower (hp), newton-meter/second (N-m/s).

When you see P = I x V that is the general formula for "power = current times voltage" without any indication of specific units.
When you see W = A x V that is the same formula but in specific units of watts, amperes, and volts.

So R for resistance. Ω for a specific unit of resistance (ohms).
