victron multiplus case ground connection question

I am building out my van electrical system and I am using a victron multiplus 12/2000. The case ground stud for the device appears to be an m6 bolt and has a serrated washer, regular washer and spring washer. I am using a 2/0 wire for the case ground.

Question:
Is the correct order: serrated washer, lug, regular washer, spring washer, nut? It seems like an m6 serrated washer will have minimal contact on the 2/0 lug if this is correct. The metal under the case ground stud is painted / anodized so I can't just remove the serrated washer and put the lug right there unless I sand it down which I am hesitant to do

Yes, that order is correct.
The serrated washer is there to bite through the paint.
And it doesn't need a lot of contact surface area, because it's not a current carrying connection. It's only there for ground faults.

PS, 2/0 is a thousand times overkill.

i'm just following the guide from explorist.life on this and already have the wire cut - but why is it so overkill? wouldn't an event potentially involve all the DC current going to the multiplus and a 2/0 case ground cable be the path used during such an event?

I know, it's what they show in the diagram. And it doesn't hurt anything to go larger.

A fault is a short duration event. (A second or less)
Conductors are sized for the amount of current and the amount of time that they need to carry that current. This is why the EGC sizes are always much smaller than the current carrying conductors in the circuit that they are protecting.

It's the other way around. That conductor is there for the possible event where the Multiplus case becomes live. (DC Positive or from AC)
