What happened?

Each geographical area is different, so you need to look up how many solar hours you get every day
+1 for Andrews post but also you might want to calculate how much autonomy you want for your battery bank in case of no solar production.
 
Ditto everyone’s previous analysis and comments. But simply put….you need:

More power needs to be generated. So more solar panels.
More storage needed. So more batteries.

I live off-grid so solar is my life. It might be an expensive habit to obtain, but at least I get more out of it than paying for the gas to run my generator for only 3 hours a day! 🤣 I do indeed need more power Scotty and I don't care if you don't think she can handle any more!

My RV roof has no more room so I am contemplating changing my entire setup so I can add more power. I have to figure out how to make it work, explain it to my hubby (he's my Scotty) and he will make it so.

What I need is a setup that will transfer somewhat "easily" when we finish building our cabin. We will have more roof space then, but until then I need to upgrade my pv output so I can at least run a small refrigerator. I haven't had a running refrigerator in 4 years! Keeping enough ice in my non-working fridge just to keep things from going bad has been more difficult since I now live 45 minutes from the closest town. What I have now runs my minimal needs, it charges my phones, runs my signal boosterl, ights, fans and water pump.

I have recently added another 200 watt panel bringing my total to 600 watts. However... I'm still only getting around 350 watts coming in. That's only about 50 - 60 watts more than what I was getting before adding the new panel. I'm not sure why I'm not getting more output. Everything is as close to a 37° tilt (optimal for my location)as we can get it. Nothing is blocking any of the panels and I get 7 to 8 hours of direct sunlight on them. There's no overlap causing blockage in my setup. I don't know why I didn't get more of an increase in output.
