I'm not sure if I'm misinterpreting Will's setup where he has a ton of 48v LiFePO4 batteries connected in one of his systems. Is it okay to wire multiple LiFePO4 to the same bus bars even if they are of different capacities?

Absolutely, use one of those AC energy metes on amazon (here's one) and test all of the appliances you want to run, and find out how many watts you would need at a time.
