I've been looking, reading, and watching godzillions of videos but I am still confused to what exactly I need. I live in my 1997 dodge conversion van in Florida, so I thought solar would be great. I want to set up solar to run a small cooler or tiny tiny frig...small portable AC. Since we dont seem to have winter anymore i would be using the AC probably every day about 80% of the year, and the cooler every day of the year. Oh and charge my phone. That's it. No TV. Also i would like some advice on whether to get a battery/solar panel/ and inverter.... or get the all in one solar generator and panel. I am exhausted trying to figure this out. I have to get it right the first time cause I am 66 yrs old female and dont have finances for mistakes.

Define portable AC...

Exactly what are you powering?
 
I seen portable AC that dont need any ducts like a regular AC. Just cools the air.
 
it draws. AC on solar are difficult usually as they require so much power. but it just depends on your definition of AC.

I mean... exactly what portable AC are you considering?

“Portable” usually means, on wheels, with a hose or two that sticks out a window...

if that is what you are planning, know they are HORRIBLE air conditioners. Very power and comfort wasting...

at a minimum, I recommend you use one that has TWO hoses out the window. The units with only a single hose will not comfort cool a space, only blow cooled air into the room, while blowing cooled air outside... which in turn draws unconditioned air back into the space...
 
recommend you consider 12 and 24V DC powered air conditioners, and 12/24DC refrigerators.

Keeping things strictly DC has pretty large efficiencies. Roof space on your vehicle is also limited, unless you are just parked and rolling out the solar panels.
