More cells are better to less cells or the opposite ?

Hello!!!!
I started my lithium life, with a renogy 200 ah 12 v battery , and now I am thinking to dyi my first 280ah pack .
My question is, I noticed that the Renogy battery has a s16 (16cells) configuration.
The same capacity can be achieved with 4 or 8 cells (of different capacities so the fian total is 200ah) at 12v
My question here is, is it better to use more cells or worse ?
Does it really matter considering no bad connections ?

The real advantage to using single cells would be to pinpoint a problem at the cell level. When cells are parallel there would need to be additional diagnostics.
