I've been conceptualising putting an in-cab switch on the field wire of my vehicles alternator, and/or using brake light switch to engage the alternator and using a 3kwh lifepo4 pack to dc-dc charge the cranking battery. I already have a 190w solar panel on the roof. Could charge the 3kwh battery at home, like a PHEV vehicle.

No ROI intended, just curious if the project would work, save fuel and extend driving range. I was surprised how much fuel is saved by not using air-conditioning (1.5-2L/100kms).

My car is a 2008 Nissan patrol, quite old and easy to experiment with. It's always loaded with tools and recovery gear so the weight of the 3kwh battery would be negligible. It averages 830kms from its 125L fuel tank.

I could not find any examples on the internet of other people doing this. Just tutorials of how to change an alternator 😅

There was/is a Mazda that used regenerative braking to charge the 12v battery. So, yes, it does help not to use the alternator to charge the battery.
