Our 1200W inverter handles cooking temperatures described as medium high; plenty hot enough to get things to a boil. Much less power needed to cook/simmer. Curiously our induction cooktop has a roughly 50W idle consumption.

48V is what I would do but need to be careful working with the higher voltage; not for the sloppy/easily distracted rushing in a bad mood kind of person.

They do not want you to connect in series but the video shows exterior fuse to protect the battery(?), water resistance, ability to be opened for service/replacement, exposed heat sink for the BMS.
