Of the below, what is the most important to match when building a battery. I've got 48 cells for 3 batteries, so get to sort.

Those are all so close you can mix them no problem.
Do keep in mind these are Fresh New and need to be Top Charged to 3.650 to Fully Activate the electrolytes & chemicals.
The Capacity you see is the Gross AH from 2.500-3.650. As such I would assume these are most likely 304AH rated cells and therefore right on target for A-Grade cells.
 
Where are the data on the other 45 cells? I'm assuming all cells are brand new Grade A.

To me, each cell you list is just as much in capacity, to less than 1%, so anyway you arrange them will be fine. Just top balance each cell first.

IME, capacity testing takes forever, and unless I am putting cells in parallel, the cells get top balanced and put in a battery. I did just build 25 ah cells into a 2P8S 24 volt, 50 ah pack, and I also just top balanced those. Top balancing took about a day, and capacity testing and recharging with my capacity tester to gather data would take a week or longer discharging at .c2, around 4 amps, each cell individually and then top balancing them all again. 48 cells would probably take me a month.

There will be a better way to sort than I said, but it could involve capacity testing, and I don't know if you'd see the difference and if it'd be worth the effort.
 
These are MB31 314ah cells. The numbers I posted are just a sample from the spreadsheet, the actual spread sheet has thousands of cells on it, I have to scan and sort from the list. At the bottom, they posted the below, so there is a variation. I have no idea yet how closely they matched mine.

This is my third build, I've built 2 then one previously. I top balanced the first 3, so know about that.
 
So, after sorting, the below are my 48 cells, the bottom showing the variation. All very close. So my question is, what has more effect on balancing? I really only understand capacity, no real idea of what the rest means. But, seeing that I have the cells sorted, may as well group them as closely as possible, just by what criteria? Or are they really actually so close that it just won't matter?
