I look at like this the bigger the better but that might not be true I’m very new to this

8 panels will use more wire and connectors and fuses and attachments, so they are more work and expense than installing 2 panels. Small panels may be easier to fit onto a limited space like an RV roof. You will likely need a helper to mount a 400 watt panel.
