Quick question I want to hook 16 panels up to a flexmax 100 charge controller which has a maximum voltage of 150V. The open circuit voltage of the panels is 37.2 and at Pmax its 30.4. If I did 4 strings of 4 the open circuit voltage would be 148.8 . Is this doable or is there chance it could fry the controller??

Will work fine until temperature drops a few degrees and you exceed 150Voc, then you will be disappointed when it fails, and you are denied warranty due to over-volting the unit.

3S of 60 cell panels is the most you can do on a 150V controller in the vast majority of cases. 2S8P or 3S5P leaving one panel off are your choices.
