Is this just a bad match (LV6048)?

Ok, I am building a small (6K or so) 240v AC setup with a 48v battery.

After some searching, I found the LV6048 - Max PV V - 145, Mptt Range 60 - 110 VDC, 4,000 watts 80a x2

The panels I am looking at are 450w 10.69a 42v

So, I can do 7 in parallel for 3150w, 43V, and 75A to each input. It just feels weird to have an odd number of panels in each string. Is this just a bad inverter/panel combo?

MPPT range 60-110vDC, Max 145vDC

This means that running at 43 volts will not work. I assume the ~42vDC you give is the panels Voc. If not than use the Voc number in your calculations.

Therefor you would need at least 2 panels in series to get 84vDC. You would likely max out at 3 panels in series at 128vDC (staying at least 10% below the 145VDC max). You can than parallel several strings to get you wattage amounts per MPPT
 
I would recommend using a unit with a higher voltage MPPT. It will simplify things and save you a lot of wiring costs.
 
I see you posted the PV panel spec label. The Voc is 50.5vDC Thus you can do only 2 in series for 101vDC

If you want to get the most out of that panel type the array will be 2S4P for 101Voc, 3600w and the amperage will be 4 x 10.69a of around 43 amps

Since you seem to know a lot, would it be advantageous to find a better fitting panel?

Better fitting? In what regards?

Using those panels, 3600w per MPPT, your controller has 2 MPPT so that would allow up to 7200w worth of panels or 16 of them.

ETA: When designing your system you need to look at the whole picture. Starting at load needs, PV panel location and mounting, wire and fuses, inverter specs, panels specs, battery bank sizing and so on.

Solar panels are the last thing to choose.
Based on everything else.
