I have a 2018 Leaf that I've been driving 100 miles a day, 5 days a week for the last 5 years. It's still making the daily run, but with winter coming I'll be having to start charging it with the slow charger at work (1.2kw, 8 hrs.) along with the level 2 charging (6.6Kw till it's full) each day. This should get me through to my final car payment in August of next year (got that 0% financing for 72 months). At that time the car will be next to worthless without a new battery. So, I'm starting to think that maybe there will be enough life left in the battery pack for a second life as a small backup system. I have a 12v -120/240 Aims 4Kw charger/inverter sitting in the garage. I'm wondering if I can build the packs into a 12-volt system and use the Aims as a high(ish) power UPS.

Not really. NMC cells do not lend themselves well to 12V at all.
If you're going to embark on a project of that scale, get a 24 or 48V inverter and do it right.
