New guy...lil different than other newbies

Bought an off grid cabin in Tennessee
Here's what I have
8 solar panels on roof wired into two P30 solar chargers 30 amp
Wired down to 30 amp fuse blocks off those to
(8) SLR125 AGM VMAX batteries 1700wh
Connected to 300amp fuse block
Powering a Vertamax 3000 Sine Inverter
That powers a 100 amp fuse panel in the house
...So what I'm wondering...not bbeinga solar guru yet..what do I need to increase to run a 13k window air conditioner on soft start...just more batteries and larger inverter with more panels...
Previous owner said he could only run for few hours as it sucked down batteries pretty quick

Also...I was thinking adding the soft start to help reduce initial kick on eating up watts...it doesn't have one installed yet

we will need full specs on the panels and the batteries to give you any useful information. 12v? 24v? panel watts, Max volts, max amps -etc. Pics help if you have them.

Are you saying that the previous owner ran the AC unit with the existing inverter and battery bank?

If so, it seems like your inverter is just fine for the task. What you need is access to more energy (more panels) and more storage (more batteries).
