    My hot water heater always runs on the solar. The only downside is if there are heavy clouds. If I notice this in the morning I will switch the timer off and try the next day since the tank has enough hot water for 2 days.

    You can do AC coupled with backup. A 15KW Sigineer inverter will do the trick. This would be an off grid setup. You can connect the Grid to the AC input on the inverter and if your solar and batteries go off line, it would switch over to the grid.

    The mixing valve should maintain a constant 120F to the house. Only the tank gets to 180F and it is a commercial tank that should handle it.
