At the moment I can afford 16 Eve 280 ah cells to make 2 24v batteries for each converter I have in my camper. Later down the road pardon the pun. Can I put 2 more 24v batteries in parallel with the one's I'm about to build with out too many issues?
 
Seriously, not a big deal. I did the same with an additional 2x 48V batteries added to my existing two. Make sure the voltages are about the same, and connect. LiFePO4 is very easy going with this since the voltage over most of the charge/discharge curve is flat. You can check some videos from @Off-Grid-Garage on YouTube on the topic as well.

Yes, and if you do not want to buy two more BMSs you can configure them as 2P8S. It is just a question of how much space you have and how much you value redundancy. As far as I know there is no reason you can not run both convertrers (?inverters) off of one pack either. There are pros and cons for every wiring scheme.
