Ran my first test with this setup with a single deep freezer I was able to run for approximately 36 hours to 80% discharge. My inverter is running split phase 240 60hz, so the load was on 1 leg of the 240.

My Growatt is telling me I discharged 2.5 kw from the battery from this time. 80% discharge should be 4kw.

Is my setup just running at 62.5% efficiency? Normal? Bad battery?
Looking for thoughts and experience.

If you are running just a deep freeze, you should consider getting a stand-alone inverter for just for the freezer. You are losing about 1.5k just running the inverter. I'm not sure (check the manual), but you may be able to turn off the Growatt inverter while continuing to charge your batteries. That way you only need an inverter and not another charge controller.

Where are you getting your data from? Growatt Shine app? I am running SPF 6000t and using Shine app, my data is all over the place, only thing I believe is SOC. Maybe some time weighted average will give you more insight.
