So why is it labeled "EPS output" on the actual inverter, yet it's referred to in the manual as the "AC Output" switch? Does it have more than one intended purpose or feature?

If thats the power for the inverter then what is the switch on the other side? It seems like it has two soft power switches, one for the entire inverter, and then another for just the AC output? Am I interpreting that correctly?

The manual says it's an AC ON/OFF, but it's labeled EPS output, could be a mismatch between the manual and the units. The manual defines EPS as Emergency Power System.
