2× amperage?

Yes. 2 in parallel allows twice the current at same voltage. And, for completeness, 2 in series would give twice the voltage, same current.

Batteries in Parallel increase the amount of stored energy capacity BUT NOT Voltage !
You can have a battery Bank with several Battery Packs in parallel.
You CAN have different capacity Battery Packs in Parallel without issues (best to keep within 100AH of each other though) so you can have 100AH+200AH+150AH if you wish.
You CAN Add additional Battery Packs over time without Negative Consequences (This is NOT Lead Acid).
Battery Packs in Parallel SHARE & DIVIDE Load & Charge proportionately. *

*Proportionate example: Assume 3 Packs: 100AH, 200AH, 300AH in Parallel, Inverter Draw is 60A
When looking at the packs, they would show Amps Pulled as follows 10A, 20A, 30A for the total of 60A (floats a little & normal). It is also similar when charging, if pushing in 60A that is pretty much what it will look like.

General Rules for Battery Packs in Parallel. NB: LFP is NOT Brute Force Tech like Lead Acid, IT IS Millivolt & Milliohm Sensitive!
- Every Battery Pack should have a Fuse/Breaker. Rated at 1.25 X AH ie 100AH X 1.25 = 125A Fuse.
- Every Battery Cable (+)(-) must be the same length (resistance & voltage drop affects charge & discharge values)
- Battery Cabling should be kept close together to reduce EMI/RFI noise. (DC makes magnetic noise).
-- PUDENCE dictates a Master Battery switch to disconnect DC BUS from SCC/Inverter/GEAR. This is typically situated between the DC BUSBARS and the gear. See Example image below.
