I'm looking at the best way to configure 80 x 18650 3.7V 5000mAh rechargeable Li-ion batteries into 1 battery with 60v output to power a motor. What's the best configuration, plus should I solder or use pressure connections?

Easy, 16S 5P.
Group 5 cells in parallel, do this 16 time and connect those 16 group of 5 cells in series to have 60V nominal (3.7V x 16 = 59.2V).
You can solder or use pressure connection, but the end result will be poor reliability and possibly lot of problem. The best is to spot weld those cells.
Last thing, 5Ah 18650 cell don't exist, so you had/will probably buy fake 5Ah cells.
