Hello!

I currently have 16 250w panels connected to a Victron MPPT 150/70 in a 4 series/4 parallel configuration during the warmer months (30-40 ºC). In the winter, I switch the cables to a 3 series/5 parallel configuration as the cold wind really bumps up their efficiency and the controller gives over-voltage warnings.

My question is... There a a few weeks a year when there is a lot of cloud cover where I'll get an average to 200-300 watts out of the panels I have. Would it be okay to have more (double) panels connected with switches and a 40amp breaker on the input to controller in case I forget to switch them off?

Edit: I forgot to mention it's a 48V setup.
 
There is verbiage in the user manual for your charge controller regarding over paneling. See link below if you don't have your user manual handy. Page 20, 1a at the bottom of the page.
