Also... are (16) 370w panels going to actually deliver 5920 watts an hour or is it more like 1/4 of that because of the 20-24% efficiency?

Any help is appreciated!

370 watt rated PV panel will deliver 370 watts under IDEAL insolation conditions ( sunlight at optimum angle, cloudless sky, no shadowing)
Assuming the PV panels are mounted at correct orientation based on Long-Lat and angle to the horizon for your location, this will occur once during each day for a short period of time ( Lookup insolation tables and maps for north america for times, intensity relative to solar collection)

The rest of the time, the PV panel will output less than the rated 370watts as the sun rises/sets, clouding varies and shadowing occurs (if any). As long as sunlight is striking the panels, the panels will put out "something" ( even a cars headlights will cause some output)

This is easily measured by a simple current transducer and digital meter in the PV load side negative lead. Most charge controllers have this functionality and total watts accumulated within the functions of the charge controller to measure watts delivered over time.
