Switching 220V mains with sonoff relays

I’ve bought two of the 4 channel Sonoff relay sets and would like to use them to switch the output of my inverter to various load circuits. The load circuits will he switched between inverter and grid mains, so I need to be careful everything is double safe.

The sonoff relays are rated to 240v AC and the Pro version I have presents 3 dry contacts per relay (common, NC, NO). What precautions should I be taking? I suppose that switching AC doesn’t require fly back diodes as you might have across a DC load circuit to prevent arcing when disconnecting an inductive load.

I’m already thinking of using hardware interlocking, where the power to the second relay set is wired via a NC contact on the first bank of relays, so that both (grid mains and inverter) cannot be on together, even if the software screws up. Maybe I need a time delay so one power source disconnects then no sooner than a second has passed, the other mains source can connect to the load circuit?
