what is better two 12v 100ah lifepo4 or one 12v 200ah LiFePO4

Depends. 2x100 can usually deliver more amps than 1x200. I have SOK batteries. 2x100 could deliver 200 amps which could feed a 2kW inverter. 1x200 could deliver 100A which would be good for a 1kW inverter. If you need the amps to drive loads, then 2x100 is better.
