I have a 12v 300AH Lithium battery on my RV. I'm charging it with ( 2 ) 200W mono panels thru a Bourge RV 30 amp scc. After my battery had been charging on shore power for 48 hrs , my cc showed the battery at 14.1 volts. I set my battery monitor at 100% at that point. NOW , out on the road , my panels are keeping my battery around 13.4 - 13.7 volts ( according to my CC , BUT . . . . my battery monitor is only indicating the battery to be 12.7 - 13%. My (-) is about 8" to the shunt. I'm thinking I should be at least 80%. ??

You didn't give us any info about your battery monitor.
 
You're using LFP and battery monitors looking at voltage are pretty worthless. That shunt is keeping track of the total amps going in and out so pay attention to the capacity % or the Ah display and ignore the Voltage. Remember to set it at 300Ah when you configure it.

When you go to set it you can't go by voltage either, you gotta let it charge up until the shunt shows that it's not charging anymore and the Up arrow is showing 0.x amps going in, THEN hit the buttons to set it as 100%.

Remember, lead acids are pretty linear on voltage = capacity, but LFP is fullfullfullfullful-dead.
