The inrush current probably triggered the BMS and the BMS disconnected the cells. Use a resistor or a 12V bulb to charge up the inverter capacitors before connecting it to the battery.

One fuse on the positive side is enough. The type of fuse depends on the battery voltage and the charging current. I have a 12V system with mega fuses on the Victron MPPT chargers

This is our inverter's power graph. When the fridge starts there is a 776W spike, and 100W constant until the compressor stops. The freezer is the similar with only 180W spike and 75W until the compressor stops. The fridge is a full size household one and the freezer is an under counter one.

You can kill a battery with salt water or fresh water . A 12V battery can not kill you if you submerging it in water. 12V is not enough force to push enough current trough your body to kill you.

The battery terminals are fare away to being shorted with salt water. If the battery box is water proof you probably fine - maybe some (expected) oxidisation on the terminals. You are safe with a submerged 12V battery, 12V is low voltage and not dangerous.
