I'm trying to run a 1500-watt water heater. It looks like I can only use two 100amp batteries rather than a cheaper single 206amp battery with my 2000watt inverter. I need to pull 125 amps for several minutes to maintain water temperature. Am I missing something?
 
Have you considered just getting a DC water heater element? That would be an easy 15% efficiency boost and eliminate an inverter (ridden hard).
 
Hard to say without more knowledge about your battery models, however most likely your 206amp battery BMS has current limit that is below 125A required for your heater. Most of the BMS on the market are limited to 100A current, so probably yours is too.
