Building a 12v LiFePO battery - recommended configuration?

Planning to build a 12v battery for my current system ( I am using 1 SOK battery 206AH but thinking of adding it to the new one I build or replacing it with a larger one built from LiFePO
cells myself)
Open to recommendations on the configuration, I am thinking to go with 16 cells -(My first time building a LiFePO battery) - I have a 12V 2,400W inverter

Unless you're buying some teeny cells, you don't need 16 of them for a 2400 watt inverter.

I have eight 280 Ah cells in a 4s2p configuration. That's two batteries, each made up of 4s cells and each battery has its own BMS. 560Ah capacity. Runs my RV trailer very well.

I bet of you poled the group on here No One says that have too much battery storage.
If your like me in upstate NY you have to deal with multiple snow days..

I am looking at going with 8 3.2V cells for a total of 24volts....I can put more solar into the system this way and wires are smaller.
