I just installed a chargeverter and currently have the negative going to the busbar where I have 2 battery packs connected. I would like my battery gauge to read this charge I’m putting back into the batteries. Question…can i hook the negative of the charger to the inverter negative at the shunt?
This in turn would keep my capacity gauge accurate.

Yes, that's where it should be connected.
Only the battery should be connected to the battery side of the shunt.

I went the 'other way' and use IotaWatt current sensors on the 240v going to the Chargeverter as I already have shunts going other the battery bank. This let's me track generator AC input watts and is why I know I'm getting ~90% efficiency from AC input power to DC charging power.

I see a smaller wire on the buss. The shunt will miss whatever current flows through that wire. With the shunt, you want the two battery negatives on one side of the shunt and ALL the other negatives on the other side. Anything in or out of the battery will go through the shunt.
