I am looking at a Growatt Inverter with a 250V input limit from the PV's. First question: What happens if this is exceeded? Does the inverter shut itself down?

Second question: The power is 6kW. What happens when when PV's of more than 6kW are connected to it? ie more than 24A capability?

If voltage is exceeded, things go poof… NEVER allow the PV to exceed the voltage. Arrange the series so the TEMPERATURE ADJUSTED for lowest temp possible will NEVER reach the max voltage.

when max wattage is met, some inverters just clip the wattage, and output the max power rated… some cannot handle this max output over an hour… so cheap SCC can overheat and fail.
 
Thanks supervstech. One more question. Can you explain the need for "bonding the neutral of a 240V inverter to ground"? Does this always need to be done? I hope I have this terminology correct.
