I have an off grid system with two Victron 10kw Quattro inverters in split phase, giving me 20kw continuous and 40kw surge.
I have a shop bathroom and I got a 15kw Stiebel tankless water heater for it.
Are there any precautions to take for such a large load start up when it kicks on?
Surge protection? (I have Midnite Solar SPD's on each PV string and on the main panel).
Is there any risk having a load that size starting on Victron inverters?

No.

But,

Pull the covers off so you can check your battery cable connections in the inverters and batteries etc.

In other words during or just after running, go and check for hot, loose stuff and retorque or re-crimp as needed.
 
I might buy an infrared camera...
We have a $15,000 Flir where I work [data center] to look for hot spots in 12k switchgear and distribution panels.
I probably won't spend that much on mine. LOL
